Notes

Smoke malted and unmalted grain with oak chips for about 1 hour in an enclosed container (use aluminum foil over grain to trap smoke). (Don't use toasted oak -- may not smoke as well as untoasted).

Ferment cool with K-97 (60F). No dry hopping. Carbonated to 3 volumes CO2 in a keg. If bottling, use strong (Belgian or Champagne style) bottles.
