10 April 2022, 2300 – I took a sample. The cellar is up to 58 degrees and the beer is at 56 degrees according to the fermtape. The gravity is 1.025 at 56 degrees. I let it warm up to room temperature and took another reading and it is 1.025 at 68 degrees. Taste is smokey and sweet. I put on an airlock as the fermentation was not great. |

21 April 2022, 1130 –The heat belt is at 62 degrees. There is still yeast or trub on the side of the fermenter. I took a sample. The gravity is 1.022 at 62 and 70 degrees. Taste is smokey and sweet. I added 1 teaspoon of yeast nutrient and 1 teaspoon of yeast energizer and swirled the fermenter a bit to see if it will ferment out more or at least settle. |

Put in keg from primary and hit with a little CO2. Leaving it in the cellar until I have room in Keezer. |

Took off the CO2 and put in the Keezer. Very smoky and a bit hazy. Carbonation is light, but good. I also put this on Untappd at https://untappd.com/b/bald-eagle-brewing-smokey-the-beer/4920658 |
