Notes

Mash calculator avec T° voulue de 66°C , 3.85l/kg et 91kg de malt, et selon T° grain --> on a la T° de l'eau avant empatage requise. 350 l à XX °C (rinçage gateau à 82°C)...

Volume pour fermentation : 390 litres (car pour pas trop remplir et pas gaspiller). donc 400l avant ébullition.

Le rapport de 3.85l eau/kg de grain est pour les 60 min de brassage. (standard 2.65, mais dorénavant entre 3 et 4 pour malt sélectionné de maintenant). Si on ajoute les ~ 50 l d'eau de rinçage du gateau, le rapport est >4. Pour avoir 400l, du coup faut 350l pour empatage et 50l pour rinçage (même un peu plus).

en monopalier, 67°C est la T° qui permet d'avoir 50/50 entre sucres fermentiscibles et non fermentiscibles, environ. Donc pour une bière légère blonde, choix de 66°C semble bien.
