Empaste hasta 40 cm medido desde arriba. Agua a 77°C. SIn lavado de granos.

Pre acidificar el mosto con acido citrico. Tiene que terminar en PH:4,4 final de hervor.

Inocular 3,5 lt de yogurt natural. T: 35 °C

24 hs despues a ph 3,45 aprox inocular Leva 1,5 millones celulas vivas/mlgrado plato. Oxigenar doble con brazo.
