Added just short of a gallon of boiling water to bring temp from 146 to 154, then left cover off to get to 152. Eventually dropped down to 150. |

Wort is very clear and tastes good. Used a full Whirlfloc tablet. Let's see how it works out in the finished beer. |

Hit gravity right on. Wort went into fermentation chamber at 55. Will drop to 50 and pitch yeast. Will then let free rise to 52 and ferment at that. |

Yeast that I harvested from the Simple German Pils never took off in this beer. Virtually zero activity on day after brew. Went to Bader and got Imperial Harvest. Hit beer again with 90 seconds of oxygen an pitched that yeast. Started up fine and seems to be progressing as normal now. |

Heavy sulfur aroma. Will lager for roughly a month at 34 degrees and frequently gas off the keg to allow it to escape. |

Beer tastes great! Still a bit of sulfur, but not bad. Mostly clear, but needs some additional clarification. Going to hit it with gelatin and wait another week. |
