Notes

The Lion's Gate Bridge connects downtown Vancouver to Greater Vancouver's north shore in British Columbia, Canada. The bridge (along with some then-undeveloped north shore property) was financed by the Guinness family in the 1930s and sold back to the province in 1955. (Additional trivia: the West Vancouver shopping mall Park Royal is a nod to the former Guinness brewery in London of the same name).

This recipe is an attempt to emulate the modern (c. 1950s+) Guinness draft recipe using a pale malt base with some dark roast malts for colour and a bit of roast flavour. (The importance of roasted unmalted grain is overblown IMHO). Base malt could be all rice or millet (the latter might give a bit more perceived sweetness) or a combination of the two. Buckwheat (roasted or not) can provide foaming benefits.
