Targeted pH of 5.3. Hit pH of 5.25. Hit mash temp of 152 right on. Lost several degrees over time. Added about .3 gal boiling water which brought temp up to 152 again. |

Pitched at 50 degrees and let free rise to 52. Ferment was coming along the next day with a consistent bubbling.
Will ferment at 52 until I hit 1.020. Will then push up 1 - 2 degrees per day up to 58 degrees to finish out. |
