Notes

Made this for a friend's wedding. We changed the hops from Apollo and Mosaic to Centennial. For many people, including this brewer, Mosaic comes off as soapy.

The IBU and ABV is similar to other Blonde Ales such as 805, but with the crisp, piney/citrus notes from the west coast hops, and Carastan instead of Honey Malt.

It is still a reddish blonde ale that will smell like an IPA, taste like a pale ale, and finish like a blonde.

We also BIAB with 5 gal in the kettle, drain, squeeze, sparge with 2 gal of room temp RO water, squeeze, boil, chill, pitch, wait, bottle, wait, chill, and enjoy.

Mash water is 5 gal RO water treated with 1/2 tsp CaCl; hence the 4 oz Acid Malt in the grain bill.
