- 7 gal @ 164 F + 16.7 lb @ 72.0 F = 152 F (1.75 qt/lb)

- Added 7 gal @ 165.7 F

- @ 151.2 F @ 60 min
- @ 148.1 F @ 23 min, pre-stir, @ 150.1 F post
- @ 149.9 F @ 0 min

- got 4.87 gal first runnings

- Added 7 gal @ 198 F on meat thermometer
- actually added 6.25 gals, all that would safely fit in the tilted tun, poured leftover into boil kettle.

- @ 168.0 F @ 12 min

- got 6 gal second runnings

- USE MORE RICE HULLS, we used probably 0.25 lb at most and the mash went fine but the sparge definitely clogged up, causing it to take too long and thus first runnings were boiling while we were still draining, which likely led to low final volume.

- Used everything in kettle, as mentioned above the sparge took a long time and thus the first runnings were boiling for a while, we adjusted somewhat by only boiling for a total of 45 minutes, but we still undershot the volume.

Notes

-Largely based on this article (which also suggests variations, like swapping in some Munich or cherry wood smoked malt):

-Ordered from Northern Brewer, to find the smoked wheat malt milled. Other options are possible if we get unmilled, but AIH only had it by the 55 lb. bag.

-The thought behind the yeast was that it was the classically German dry yeast available at Northern Brewer, and we didn't really want the fruity wheat beer flavors of SafAle WB-06.

-2.6 vol. of CO2 recommended by linked article.
