Signs of yeast activity (spunding valve bubbler) 18 hours after pitching yeast. Trying to keep PSI on spunding valve <5 PSI. |

Activity in spunding valve bubble has pretty much ceased -- reduced venting to bring PSI up. Still around 3psi with no obvious venting happening. Assume fermentation has pretty much finished. Turned temp up another degree |

Keg to keg transfer to serving keg with 8 oz water & gelatin (143F). Pressurized to 30 PSI for 24 hours. Will reduce to 18 PSI for ~ 3 volumes CO2. |
