Set the chamber at 66 F, pitched dry yeast right into work while filling (kinda hit starsan bubbles so I hope it was fine). |

Here is how fermentation went:
The first 24 hours, I did not see much fermentation activity, so I decided to pitch another sachet of Belle. I did that about 20 hours in.
By the following morning, Saturday, there was a fluffy krausen on the beer.
The following Sunday I moved the fermentation temp up from 66 F to 68 F, as the gravity was still in the high1.020s. The next day, Monday, I moved it to 70 F. and the gravity was at about 1.014
Tuesday I moved fermentation temp to 72 F, then Wednesday to 76 F. I measured the gravity at that point and the beer was at about 1.006-1.008. Thursday (today, 1 week in) I pushed the temp to 80 F and will hold for a day.
The beer will be kegged tomorrow, Friday. |
