Notes

Started boil with 6.75 gallons of water. After steeping specialty grains for 30 minutes at 158 degrees, wort level went down to 5 gallons. We added 1 gallon of water and then added malt and brought to a boil. I think that is what made original gravity lower than expected. We expected original gravity around 1.098 but ended up with 1.081
