Initial gravity is only 1.027 at 74 degrees. Potential alcohol is 3.3% ABV according to the Forgotten Sea website. I also looked at the Seltzer on the Midwest Brewing Supplies website. It says the OG is 1.035 but is 5.5% ABV, but according to the Forgotten Sea website, the max would be 4.0 % ABV. |

AC has been off for a day so that is why it is probably a bit warmer than it has been. Taste is good. I believe it still has some fermenting to do as Rob said seltzer’s usually go to 0.992 or so, which is why the ABV can be higher than the potential alcohol. I see the same thing having to happen with this cider in order for the ABV to above 3.3 % ABV. There are some bubbles in the sample cylinder which tells me it is still fermenting. |

12 July 2021, 0800 – took sample. 1.010 at 72 degrees. Fermentation seems complete based on the SG table from website of 1.006 plus 3 to 5. Added cider essence to carboy and transferred to keg and two 2 liter bottles. Put keg in keezer to cold crash. Used Carbonator to force carbonate some for beer club. Other 2 liter bottle in the keezer.
Final Gravity is 1.010. Potential Alcohol = 0.9%.
Total alcohol is 3.3-0.9= 2.4% according to Forgotten Sea. It is 2.23% according to Brewer’s Friend. This is a lot less than I expected.

Taste is good. I get the peach and passion fruit aroma and flavor. I am not sure if the fruit base was apple or not. It is not clear based on the instructions or the Northern Brewer/Midwest or Mangrove Jack's websites.
