Notes

Started fermentation on 6/21/2021

Used 4.5 gallons of 100% pure apple juice and 0.5 gallons of tart cherry juice.

OG = 11.8 Brix = 1.0475 g/L

Used harvested Liberty Bell Ale yeast from the Stillwater Pale Ale.

On July 4th, Brix was 5.0 which equals 1.004 g/l after correcting.

On July 5, I took a hydrometer sample and shook the CO2 out. Hydrometer read 1.010 g/l. Refractometer read 1.007 g/l.
