- Added 3 gal of water (no campden or anything) into each fermentor, then added in 5 lb honey to each, first pouring the honey.
- Shook the honey and 3 gal until honey was incorporated, then spooned out the remaining honey from each jar (tedious).
- Topped up the fermentors to 5.25 gal, shaking in all the yeast nutrients and other additions.
- I actually took OG readings, white topped airlock fermentor was 1.036 @ 64 F, red topped was 1.040 @ 64 F, will use the middle of them for OG mark.
- Yeast manufacture date: 24 March 2021. |

- Noticeable fermentation (bubbles+krausen) 24 hours later, added next nutrient dose.
- Based on reading the nutrient guide, I probably should've added this 12 hours later. |

- Transferred to two kegs, adding four crushed campden tablets, sterilized with boiling water, to each, according to the usual stabilization process.
- Tasted a bit dryer than last time, likely due to giving this longer to complete fermentation. Added campden to Chris's keg of the last batch at the same time and, opening that, it seemed fairly pressurized, suggesting it had fermented further. We had packaged that last batch after two weeks of fermentation. |

- Andy just dumped his potassium sorbate into his keg. No sterilization, because he was in a hurry. |

- Andy added his honey this morning around 11:30.
- After much shaking, tapped it just now. Still flat, and a bit sulfur-y from yeast in suspension, but definitely good. |
