Notes

Pils for graininess. Munich and honey for some caramel malt flavors, and some wheat for extra body and flavor.

Shooting for 25 IBU's with 2 boil additions one at 60min and one at 10 with cascade and lemon drop. 20min whirlpool while cooling down the beer added around <160F. This is also when I'll add at least 3 grams lemon zest.

OYL-500 is a hybrid of the Dupont and Thiriez strain, and should provide a lot of fruity esters along with the peppery phenols. I plan on fermenting this at around 68-73F, and raising the temp near final gravity to ensure full attenuation. Should finish up in around 10 days.

Water profile has a higher sulfite to chloride ratio to emphasize the dryness, and hops, but still a rather low total ion count.
