Notes

Moving to a "heat first, rest later, all-in-one" mash method.

Dissolve the salts and the metabisulfite into the mash water.

Add the grain, mix thoroughly and light the flame.

Stir constantly while heating the mash to 155 (145 for drier beers), cover the pot, and knockout the flame.

Rest 30 minutes

Pour into boil pot lined with brew bag and strain.

Place the brew bag back into the mash pot and rinse with remaining water and H3PO4, strain and add second runnings to boil pot.
