Miscalculated my boiloff, needed less water than BF anticipated, still right to the tip top of my kettle.
Kettle lost about 2.9 deg from ideal mash temp (154) |

Despite stove being very very hot for cooking, it was underpowered to fire this big of a kettle with this much liquid. Had to keep the lid almost all the way on to maintain a decent boil. If lid came off the boil slowed to barely a simmer.
Still hit very very close to OG with about 34oz of liquid remaining - partially miscalculated strike water volume, condensation from lid, lack of boil off.
Still had to run it for close to 110 minutes rather than anticipated 90 min. Better than I thought it would be though. |

Have seen no activity whatsoever in fermenter, looks very inert, worried that yeast had been killed in fridge.
Took a sample this morning, almost 36 hours after pitching and happy to find it is at 1.028.
Flavour is good, tastes like the beginnings of a Best Bitter, colour maybe a little darker than it ought to be. Very little homebrew taste, something I've fought against in my last three brews. |

This is my final note for this brew.
Lots of problems encountered, but the finished product is quite fine. No doubt sweeter and less bitter than what I was aiming for, but drinkable.
1) Lost *a lot* of volume to trub. This is an equipment problem, but there was an immense amount of matter in my fermenter. What seemed like 2.5 gal was actually more like 2 gal going into bottles.
2) Gravity stalled out at 1.022. Yeast needs a consistently warmer temp that I could not sustain, may be part of the problem. Once I saw it hit terminal gravity I let it rest for an extra week just to be sure, then bottled.
3) This is my fourth brew and is devoid of the "homebrew taste" I've had in my other brews.
4) Darker than it should be for a bitter and for what I was cloning, sweeter, and "thicker" than I was hoping for - almost more like a porter than a bitter, but for what it is it's quite good.
5) Over carbonated. Was aiming for a low amount and so didn't use much corn sugar, but I imagine because of the sweetness of the brew there was residual sugar. No bottle bombs, but way more carbonated than I was aiming for. This is a welcome thing, though, as some of my earlier beers haven't carbed at all. |
