Notes

This was brewed on a Tuesday for a party that Saturday. Hops were originally put in a suspended BrewBag during the whirlpool, squeezed dry, then transferred to a fine mesh bag and put in the fermenter at racking. It hit the fermenter at about 6pm, was then kegged and QuickCarbed Saturday morning, and served about 2 hours later. While it was a tad hazy that day, the left-overs dropped 'gem' clear by the end of the next week. The Crystal could maybe have been traded for more RedX, or just Munich. While it was a tad sweet on the front, the finish was still properly dry due to the water profile, and the sweetness might have accentuated the fruity hops and yeast esters. (guava & apricot)
