Added 100g of amoretti extract to fermentation at yeast pitch.. lets see will it ferment out, sample taste is perfect. Also added clearing agent at yeast pitch. |

From the sample point of view the grapefruit taste even from the extract is very noticeable. I am in the edge of decision that should I add the fruit there or not to boost the flavor. Gravity is also close to completion.
Edit: Since this is grapefruit pale ale I decided to add the meat and zest of one grapefruit at the same time with the dryhops.
I vapored water by boiling and handled the sanitization of the meat and zest by that and freezed them to extract more flavor. Also I scraped all the white pith of the zest and did 2 rounds of cold water to boil with them. |

Took a sample and siphoned the beer to cold crashing vessel. Starting the cold crash today for multiple days. Sample has the same shitty taste that my earlier or very first grapefruit ipa had where i used the extract. So I am never going to use that again, only plain fruit and zest. But lets see how the final product will turn out. Also it would be very tempting to dry hop this one more time in the cold side few days before bottling. |

24h Crashed so added gelatin and 30g of Centennial dry hop addition. Interesting to see the effect if any on the cold side dry hop. Then this will be packaged directly from the cold crash vessel. |

This beer was quite ok, not bad in any means but the grapefruit extract has to go. It just does not work well in canning.. I think it would work in a keg or something similar very well. Need to try out vodka for the zest next time.
Also the malt flavor was quite strongish.. all though I think it supported this beer quite well, but it was more roasty then sweet. So I think this recipe could still be tweaked quite a bit for the next try. Color was ON POINT, this was clear really glowy RED... awesome color.
On the hop point of view this was not too bitter or anything like that, but I think this could have more hops on the whirlpool side and maybe even less on the bittering side.. but definitely hopping was not too much in any means. |
