Notes

water: 18 total gallons used 10 in mash, 8 in sparge.

Recipe called for 4.25 lb of rye, ours didn't have that due to the grains not getting to us.
Ended up with approx 12.5 gallons (grain loss would have taken care of 1/2 gallon of that. Also our boil wasn't very vigorous.)

Target OG with correct grain amt was 1.054
Without the grain target was 1.043
Actual OG was 1.040 which had the extra volume, bringing efficiency to 75%.

Doug fermented with Wyeast 3711
I fermented 5 gallosn with Belle Saison
other 2 gallons I pitched my harvest of Voss Kviek, didn't show signs after first day (at 70) so I pitched my harvest of the K-97 Kolsch yeast.
