Made a yeast starter using 143 grams of DME starting 23 March 2021 at 0445. Yeast starter was going good the evening of 23 March. By 0700 24 March, there was a lot of yeast in the slurry. I didn’t want to take time to cold crash and add more malt, so I will decant some into a bottle and store it and use the rest in the batch. |

30 March 2021, 2215 – took a sample. Gravity is 1.038 at 66 degrees. Still bubbling on top and in airlock but the gravity seems too high. I am adding 2 tsp yeast energizer. Taste is sweet. I thought maple at first, but I get a small hint of chocolate. |

took a sample. Gravity is 1.030 at 66 degrees. Still bubbling on top and in airlock but the gravity seems too high. Taste is sweet. I thought maple at first, but I get a small hint of chocolate. I was going to do another yeast starter and add it, but I just checked Brewer’s Friend and the Final Gravity should be 1.026 so I am just going to leave it go. |

15 April 2021, 2223 - Final Gravity is 1.030 at 68 degrees. Potential Alcohol = 3.5%. Taste is more chocolate now and roasted grains. Put into a keg and put in Keezer. |

The carboy was almost full, but it fit into the keg so I figure about 5 gallons or 19 liters. Flavor is not maple now. I get a chocolate flavor and roasted grains. |
