Used an online recipe and substituted for available malts, changed the 10min Amarillo to magnum hops and subbed citra for an amarillo/cascade combo at 0min. The malts and hops fit the target flavour and aroma profile and it hits for all the vitals in theory. Also a newer style of beer so I wasn't trying to find all American malt or anything fancy like that.
Too much grain on the bill to fit into the Grainfather. We needed to remove/not use roughly 1kg of grain but no way to tel what mix the unused grain was. The gravity was also low because of the efficiency of a large mash. To get the gravity up we had to add 1kg dextrose before the yeast went in to ferment.
