Notes

Brewed on 3/7/21. OG seemed off the charts, was 1.080 after cooled to 76-77 degrees. Tested using Brewmaster's Select hydrometer. I did squeeze the muslin bag that had the white wheat in it to get all of the liquid out of it utilizing a strainer (perhaps that was the extra sugar to make the OG so high?). Using a 6.5 gallon glass carboy, started with bubble airlock and switched to large overflow tube (ended up not needing) on 3rd day due to having rigorous yeast activity the next day with 2 inch formed krausen. On the 4th day the activity slowed tremendously and is at a snails pace. The air escaping the tube is at about 10 seconds on day 6. Still fermenting will test FG on Sunday. FG on day 7 was 1.010.
Everything sanitized with Star San.
