Boiled for 15 minutes then cooled to 110F using plate chiller. Topped off kettle with CO2 and pitched packet of dried yogurt culture for lacto and covered with saran wrap and kettle lid. Set temp to 108 on controller and used plant heating pad to heat. put packing blanket over whole unit. temp was 105 at that point. |

Boiled for 1 hour adding 1/2 oz of hallertau hops at 60 minutes. Whirlpool for 15 minutes and temperature dropped to about 180. Ran it through the plate chiller using a copper coil as a pre-chiller in ice and ran it into the carboy. |

Nice and sour sweeteners from the mall most likely a biscotti kind of sweetness and a little bit of watery taste according to Neil. Which might be trans 2 nonanol from sucking distilled water in and probably air. Temp went from roughly 80° to 60 inside the fermentation chamber in a few hours. |

started cold crash. attached CO2 bottle and squirted CO2 into carboy every 2 hours or so until temp reached. |
