After about 15 hours or so, there was no yeast activity; Temp reading was 67. I placed a small space heater near the Catalyst, blowing near the lower cone. Surface temp is a pretty steady 82; internal temp seems to be holding at 74. About an inch of krausen at the top, and lots of yeast chunks swirling in the wort. |

Moved the heater back and lowered it slightly; I'd like to keep it in the 75-80' range. The yeast is quite active. |

Turned heater off and wrapped fermenter in blanket. I didn't want to leave an electric heater on while I had to go to work. |

Tit: 1.021 @ 76', Refractometer 1.035/6 corrected to 4.14 °Plato / 1.016 SG (ST), 4.06 °Plato / 1.016 SG (PN), per https://www.homebrewmap.com/en/tools/calculators/refractometer-correction - 1.04 correction factor.
Tasting notes: Citrus aroma, nicely bitter and a floral finish. I think this will be a good beer. |

Note that the battery in the tilt died; hence the steep decent on the chart. |

Put it in the keg and started the force carb.
Following this schedule:
1 hr @ 3–4psi
Raise your pressure 2PSI per hour until you reach 10–12psi. Leave it at 10–12psi for 24 hours.
Pour a pint and test the carbonation. If you think your beer needs more CO2 leave for another 4–6 hours and have another pint. |

Carbonation is pretty good after 2 days @ 15psi; lowering to 12 and switching to standard gas in. Will remove the carb lid later this evening.
Fairly bitter and piney; hints of mango in the taste as well. I like it. |

I deleted the tilt device and the associated data in an attempt to solve an issue with TiltPI not updating... far lot of good that did me.
I hate technology. |
