Ground the grains the night before for this batch and the Doppelbock to follow. Some noticable difficulty with the grain mill which may impact efficiencies on both.
Established yeast starter two days before using 1/2 cup DME into sterilized water. Made what I thought was a copious amount.
Per usual routine pre-heated the mash tun, added water at Mash Calculator recommended temp - still had to add water to achieve lower mash temp goal of 148 F.
Mashed for 45 minutes
Fly sparged with boiling water
Vorlaufed for 10 minutes via 1 qt glassware directy into the mash tun.
Drew 7.5 gallons to the kettle when done. |

Was able to limit boil over to minimal!
Added 1 oz Fuggles at begin of 60" boil
Added 1 oz E. Kent Goldings at 15" left
Submerged chiller and added whirlfloc
Boil complete at 3:50 PM |

Chilled wort with tap water to 78 F
Transferred glass carboy downstairs and pitched yeast starter
Estimated OG - Neglected to take OG!!!
Did equipment cleaning in prepping for second brew this holiday weekend. |

Note to self: Mash at higher temperature next time! Fully attenuated and dry as a bone, this one is. Higher mash temp would leave a bit more body (less conversion of starches) and produce some esters which is desirable for this beer. |

Had a full gallon left over after filling the Keg. Need to adjust the recipe to reduce the overage...
Expunged air with CO2
Left full keg with minimal CO2 pressure in keezer to cold break
Still have half a keg of brown to consume before I need to carbonate this brew. |

Most errant in my reporting duties and for that I apologize. Have been tasting this for at least a week!
Head: ideal. Light tan, has staying power
Aroma: malty (with recent bout of sinus infection hard to really pin down)
Clarity: SUPERB. Beautiful brown amber. Need to let my brews sit longer before sampling!!!
Taste: Highly attenuated. Mashing at higher temps would benefit the mouthfeel and reduce the dry finish to this beer.
ABV: Yes |

Aroma: Malty, my friend
Head: Beautiful, light tan, long-lasting
Carbonation: Beautiful to watch those bubbles dance in the amber light
Color: on the brown side of the amber/brown divide. Beautiful color
Clarity: Crystal. effing gorgeous
Frustrated that I cannot take a picture of this one for the file! |
