I had to take 1.5 quarts out of the mash because I couldn't fit all the grain in.
So, mashed with 6.1 gallons, added an extra gallon while sparging. |

Up until now the voss kviek had a really harsh earthy flavor/aroma that overpowered everything else. It has now mellowed out and is no longer noticeable.
9/10 beer
Very dark, roasty stout flavors. Overwhelmingly bitter, which is fine for a stout. Could possibly try increasing the caramel malt proportion to increase complexity and body.
Aroma is almost perfect and on point for a stout.
Oaky flavor and aroma. HBC 472 could be even lower, I worry how this will taste in 3-6 months.
Lower carbonation, so on par with an irish stout.
Head lasts maybe 30 seconds, could be better but really doesn't need to be for the carbonation.
Body is fairly mild without being watery.
Alcohol is not noticeable.
All the flavors work with each other, I don't notice anything out of place. This is an incredible beer in its own right.
It could use some coffee and/or chocolate, but it doesn't need it. |

Some are still not ready. They have a syrupy taste, and have the distinct, overpowering voss kviek aroma/flavor of earthy, bready, citrus. |
