The insulation worked great, but I way undershot my mash water. The sparge helped recover some points but I ended up doctoring my gravity with about 2lb of DME, to hit 1.041 pre-boil. |

Developing very well. Not detecting any fruitiness, just a robust malt flavor and some subtle hops. Fermentation seems to be happening fairly vigorously at this point. Dropped 10+ points in 24 hours. |

A nice clean, malty beer with a mildly bitter finish. Will soon increase ferm temp to encourage finishing and clean up. |

I'm getting some more yeasty notes as the beer finishes, maybe a hair of acetaldehyde that with any luck will clear up. The blow off tube is still bubbling and the beer has a fair amount of CO2 in it, indicating that the yeast is still active. Flocculation is noticeable in my sample. Ramped up to 65* over the last 24 hours to hopefully shave off those last 7-8 gravity points. |

I'm not picking up any diacetyl or acetaldehyde notes. It's a good, malty lager on the dry side. I will let the d-rest period finish out at least until Friday before packaging, but all seems well! |

At the end of the D-rest, this beer is brightening and tasting delicious. Very clean. Will package this weekend most likely. Very pleased with it. |
