Mash - unless it seems that any positive attributes of the finished product would be directly attributable to the complicated mash schedule, I would simplify in future iterations. I would consider a Hockhurz “high-short” with or without a single decoction as the next alternative. The original recipe probably was drafted prior to the availability of PID controlled recirc systems. |

Fermenting aggressively at 15 psi. First signs within just a few hours of pitching. I’d say the 4L starter worked! (Decanted) Temp is 65 ambient, but ferm may be close to 70. |

Opened valve thinking that I should do it while ferm is still somewhat active so it rouses yeast and they consume some portion of the oxygen let in from the ‘cone’ reservoir. I will check gravity later. |

This was good. It’s not technically gone, but has sat in kegs in various states of care for quite some time. I don’t think it’s ever been heated up, however, so maybe it’s just aged. |
