9:45 - Brewing Started
Cracked grains added to kettle for 30 min / 170 degrees. Heat turned off at 170 degrees
Add a timer for this next time in session |

10:30 - Grain bag removed / malt added / heat off

43 min into boil - liquid started boiling. Reduced heat to off to prevent boil over. Re-lit burner and reduced to barely on to continue boil. |

11:20 - Chiller inserted to kettle for sanitation. Had to turn heat up to continue boil. |

Fermentation temp is at 72 degrees / yeast started at 80 degrees for 15 min / stirred then set for 5 - blow off tube installed immediately |

5:30 am - No active fermentation that I can see. Temp has settled at 70. Slight bubbles at top. |

The prior evening, foam had started and an occasional burp of the blow off tube. By 6am the blow off tube was pushing foam through it and a burp rate of 1 every 4 seconds. Temp is settled on 70 degrees. Looks good |

7:30 - Fermenter burping once every 25 seconds. Temp holding nicely at 70 degrees. Foam has decreased and not pushing into blow off tube. Everything going as it should. |

Still burping without any concern (1 every 33 seconds). Color still looks good. Very hard to see yeast doing its work because of the dark color of the beer. Temp still holding at 70. Got to love the room under the stairs. No HVAC Vents and it holds a perfect temp.
Need to figure out how to do tests. Maybe elevating the carboys will allow me to use the spigot and I can run a test. This will be good for future set up. |

To my surprise, the blow off tube is continuously burping off CO2. Very interesting. The foam and brew looks a little amber in color. Can't wait to get this sampled.
Getting the brewhouse set up and planned. |

Temperature has dropped a little. Still burping...though not very "hard" as in the beginning...and probably 1 every 4-5 seconds. |

Not sure why temp decreasing. Maybe the lack of heat in the house? Burping 1 every 13 seconds...slowing down. I need a few more days to finish shelf and sleeve project and then the beer will be ready for racking. |

In Keg and at 8 PSI for about a week. 2.2 CO2 volume. Gravity lowered a little. |
