Notes

This is a Scotch Ale base for a Winter Warmer. Mash all grains at 152F for 60 min. Mash out at 168F for 10 min. Add dried malt extract and maple syrup at 60 min in the boil. Steep the cherries in about 2 quarts of first wort runnings for about 30 minutes. Strain out cherries and add this to the last 20-30 minutes of the 60 minute boil. Add hops at times above. Ferment at about 64F. Add the vanilla and cinnamon in the secondary for 2-3 weeks.
