Fermented open for ~4 days, then capped on high activity with spunding set to 32psi Let ride for some days until it tasted mostly right. Transferred under pressure to serving keg - pretty easy, watch for foam up into Spunding, probably should build out some sort of trap. |

Mild flavors, apple and sweetness - minimal cinnamon. I think off flavors that I can’t ID. Not trash I think, but going to get a second opinion. |
