Base malt was adjusted - reduced pale down to 2.5kg and added Pilsner and honey malt. Mash went smoothly. Did 15 minute vorlauf |

Overshot the volume somewhat. Should have been about 28 litres but was bang on with the preboil gravity |

Easily had 24 litres at the end of the boil but the trub was fairly loose so a good two litres were left in the kettle |

Transferred to keg for kegging and bottling. Primed 50/50 with 56.5g maple syrup, 42.5g dextrose. Bottled two 750ml cork and cage, two 650ml capped, and two 340ml capped |

Conditioned with maple syrup and dextrose. Carbonation was not bad but not quite there so force carbed for a few days at 20lbs. Drinking experience was a little muddled off the start. Some mead like flavours from the carb addition of maple syrup I would guess. After 2 weeks has settled down with subtle smoke, maple and chocolate notes. Head retention is a little low |

Still drinking reasonably well. On the mead like note I think I figured it out - honey malt. Probably should cut this back from 245g to 100-150g. It's nice to add to enhance the maple side but too much makes it a weird perceived sweetness |
