Notes

Another run at the Pals Have Fun base beer. Clearing out the freezer and using up some bags of hops. Changing up water profile to favor chloride over sulfate. Trying to get a fuller beer and not really following style guidelines. Also using different yeast (A38 instead of WLP001), partly due to age of WLP001 (7th generation and showing signs of overattenuation), but also due to desire for a more fruit-forward beer. Again, not really fitting style guidelines for expressive yeast, but trying to dial in a wheat beer I really like. Also the yeast flavors tend to compliment the fruity hops, rather than typical banana and clove from German hefe yeasts. Lower ABV, so needs some body and flavor. Changing water and yeast to see if that helps.
