Notes

Measured alkalinity of 230ppm.

Reduced alkalinity by 100ppm aiming for a broad dark profile. This gave me a mash pH of 5.4, happhy with this.

A grain bill of 9kg led to some issues in mashing into 23Lt of water. The BrewMonk was 'full' and very much on the edge. I could have extended the recic pipe to give space for a slightly longer brew, but this would be marginal. Probably lost around 9l to the grain, leaving me with 14 Lt of wort! Sparged with 14Lt to take me up to 28Lt preboil. I may top up during the boil if necessary.

Ended up with 21L in the FV at 1080, so not stupid. THe sparge was stuck and I had to scoop out sieve loads of grain and press them in turn.

After pitching, nothing happened at 13C for 2 days and indeed no action until I upped the temp towards 16C.
