Biggest OG yet. I think it was 5.5-6 gallons. Boiled nine for three hours. I will know better on secondary transfer. Primary was split between two give gallon carboys. Used about half a Tbsp of CaCl for first time as well. |

Transferred to secondary. Gravity was 1.062 or so. Decided to rehydrate two Safale 05 Yeasts and pitch them to try to attenuate it deeper. Need to try to pull another 17 to 20 points. Had a nice smell and appearance though. Soaked four ounces of cocoa nibs in Kirkland vodka and added as well. |

Added 1.5tsp cinnamon, two vanilla beans cut open and soaked in bodka, and two dried ghost peppers in a SS tea steeper. Going to taste it in a few days and pull if spice is good. |

Was able to get gravity down to 1.046 w the WLP099 Super High Gravity starter. |

Sanitized a teaspoon and sampled to test the spice. Definitely has a nice spice note yet does not linger. Pulled the Ghost Pepper out after four days in the secondary. |

Bottled this using 3.75 ounces of priming sugar. Final gravity was 1.036 which puts this at 12.8% ABV after conditioning. Definitely has a spice note to it but not overwhelming. After conditioning will probably smooth out a little more too. Will probably use less ghost pepper the next batch either way. Got 6-22oz and 46-12oz bottles. |
