Pre boil grav + further calculations indicate that with a 1.5 hrs brew, I'll hit an OG of 1.130 instead of 1.112. Now adjusting the 45' hops payload from 12 to 22 grams, to bump beer IBUs to 90. This should keep the IBU:OG ratio to something acceptable (0.7). |

OG lower than expected when calculated with preboil measurements... The extra hops were probably not needed. Lying at 90 IBU for 1.102 OG, ratio is around 0.88. Still OK but high. |

Moved to the barrel! New American oak barrel. Prepared with hot water, soaked in water for days. Then 1L of bourbon for a week, turning the barrel a little bit every day, and shaking.
Emptied bourbon, racked beer this morning.
Had a taste; noice. Bit too bitter maybe as expected.
Since the oak is new, will have to check on the beer regularly, and soon. |

Packaged this morning. Tasted yesterday, and it was already very woody (barrel is new + small = high ratio contact surface / beer volume).
Priming sugar: dextrose monohydrate, 37g for 9.5L of beer (target 1.8 vols at 19C)

Tasting note: one of the 75cl bottles with an extra priming sugar block.
Aroma: sweet, raisin, soy sauce and white chocolate
Flabour: soy sauce, woody/oaky, liquorous, slightly hot
Carbonation medium. Body heavy. No head retention. Head is dark brown. |
