Notes

Elderberries were sourced from my own Sambucus Nigra (Black Lace) plant, they are not as dark as wild elderberries but should still give good colour.

60G of the ripest I could find of these berries were cooked up with about 30g caster sugar and some water, and then strained to give a dark red syrup, which was added at the end of the boil.

Light DME has been added to bolster the strength, after a measuring mishap meant 1 kg less vienna than I thought went into the boil. If re-making, add the vienna back, remove the DME.
