Tasted good, but with a little bit of a sour citrus flavor. Too young? Letting the rest bottle condition a little longer. |

Very carbonated. Fizzed out of the bottle upon opening. Good head, at least compared to my other beers, but doesn't seem to retain it. Still a bit sour; could it be a sanitation thing? It's not off-putting in this particular beer. I should brew again now that I'm using no-rinse sanitizers. Hazy -- but that's okay for a wheat beer, I think. Good sweet, malty aroma. Lots of yeast on the bottom of the glass; also probably appropriate for a wheat beer. |

Opened another bottle. Did NOT gush out of the bottle. Practically no head. Also tastes less sour. Did I do something wrong during bottling? Mix the priming sugar incompletely? Did the last bottle have some sort of infection? Things to ponder. |

Tried another bottle. The "sour" taste hasn't aged out. I did a more deliberate, gentle pour to try not to stir up sediment -- it looks a little hazy, but relative to wheat beers in general I think it is decently clear. Overall, I think this is a decent beer -- I'm going to brew another batch and try to work out the sour off-note (better sanitation, likely). I have one more bottle that I'm going to chill longer and taste later. |
