Started mash at 68c and added ice cubes to come down to 65.5c
Hit PH 5.4 after adding the lactic acid. Before that it was hanging around 5.7-5.8 |

Did a extra long whirlpool due to needing to eat lunch! Then double chilled by running into HLT then re-chilling into the fermenter. This didn't improve the temp too much. First run through brought it down to 26c then 2nd run down to 23c. Not really worth doing since ice-box chiller running on the fermentor reduced to 18 in a few hours |

Did a taste test as well. Yeast has really flocked out well. Tasting dry but fruity with a hint of lime and subtle pepperiness |
