Notes

Somehow ended up with almost 6 gallons and forgot the cane sugar so after I made that with water it must be 6 gallons. Dunno how that happened because I specifically remember stopping sparge right at 7 gallons. I thought wet hops were going to soak up more wort but maybe the water content added some? Anyway got to 1046 without the sugar so just now adjusted the volume and efficiency. Should still come out about 6%. Pretty high efficiency! I embraced the batch sparge and washed grain bed well with bigger batches of water and stirred throughly. Took less time. Brewed this in the afternoon during daughter nap. Reused hothead, made mini starter with no activity so I was worried but prob 6 or 7 hours after pitch it was rocking. Ferm fridge smells great.

acquired 20.4 oz wet hops today from courthouse hops up in king and queen county. using water profile from cane west. using minimal ultimate warrior 25% AA hops for bittering. not sure what the AA is on these wet hops but imma try to put em in in the last 5 minutes or so. the guy said to immersion blend them - i think i will have to take some wort off into another pot and add the hops there to accomplish this. was considering using some other pellets to bump flavor but i think itll be fine with the wet only. if it doesnt come out super flavorful then it will still be bitter enough it should still be like a pale ale.
