Notes

1.061 pre-boil gravity measurement was off as the final pre-fermentation gravity reading was 1.052. Mixing issue? 5.2 pH measurement of mash. 1 hour mash. Held 153* F extremely well. Chilled in ice bath. 1 hour to pitching temp. Dry-hopped in primary to limit oxygen exposure and because the yeast is healthy and highly flocculant.
