Yeast harvested. 400ml of yeast cake labelled 'Wyeast 1056 American Ale Gen2' and put in the fridge. |

21.5L of 22.2°C beer primed with 125g table sugar dissolved in 130ml boiled, cooled water (23.2°C) to give carbonation level of 2.25 vols of CO2. Racked into:
- 6x 330ml bottles
- 4x 500ml bottles
- the rest into bottom tap pressure barrel
17.08.20 - barrel leaking from tap seal. Barrel hissed with lots of pressure when lid removed. Beer syphoned to bottling bucket. Barrel cleaned and sanitised. Tap sealed with leak sealant on external seal. Primed with 46g table sugar in 56ml cooled, boiled water.
21.08.20 - barrel leaking from tap seal again. Can observe the pressure of the barrel pushing the beer through the sealant (almost pulsing it through). Barrel hissed loads with lots of pressure when lid removed. Suspect issue with over-pressure relief valve on barrel lid. Beer syphoned to bottling bucket and then bottled without further priming. |

This beer was very good. Single-hop nature meant that the bitterness and flavour wasn't totally balanced but this improved with time as the beer matured. |
