OG was way low at first, 1.041 as reported by Tilt. Seems like I didn't mix things enough when adding water. Some stirring brought it up to 1.061. |

Tried to dump trub from cone after three days, but got mostly beer, with a little gunk in it. Not what was expected, stopped immediately. Try again in a couple days? Or was it simply that the initial opening of the valve led to a gush of fluid, maybe poking a hole in the trub? |

Successful yeast dump this time. Opened slowly, drained into coffee pot so I could see contents. Stopped when output was more liquid. |

Took taster from sample port on fermenter, to check flavor implications of current high SG. (1.020) 9 days in, tastes pretty good. Some maltiness, which I was hoping for, but not over the top. Even if fermentation stalls at this level, should be ok to bottle. |

Raised temp on controller from 66 to 68. Not really intended to be a diacetyl rest, but simply raised temp a couple degrees to prod the yeast a bit to squeeze out a little more gravity drop. |

Another yeast dump from the cone. Plenty of nice soupy fluid collected. Small sample taken as well from sampling port, tastes like it has potential to be a nice malty amber. |

Last cone dump. Cloudy/murky beer, but seems to be mostly beer. Sample from actual sample port clearer, and tasted pretty decent. Probably time to bottle. |

Bottled to a mix of 16 oz flip top and 12 oz bottles. Lower total gallons than expected, but not too surprising. Did a few yeast dumps, and left some soupy remnants in the fermenter at the end.
Primed with 77 grams of table sugar. |

First taste, opened a bottle and shared with Stella. Carbonation low, but may just need more time. Malty, as expected. Flavors a bit disjointed to me. Stella said she liked it. Will wait a couple weeks before trying another. |

Still lightly carbonated, a bit too malty, with a touch of sourness. Not thrilled with it so far. |
