Let yeast sit at room temperature overnight and pitched the next morning at 0800, as the wort needed to cool to room temp also. Per WhiteLabs site on pitching lager yeast: "Start the yeast warm and lower to 50-55°F after the start of fermentation. The yeast should be pitched at 66-70°F. Once you see active fermentation, bring the temperature of the wort down 10° per 12 hours until the desired temperature is reached. This method works well without forming high amounts of esters because most esters are produced after the first 12 hours." |

Loaded carboy into fermentation chamber (Danby Freezer + InkBird Controller). Used Northern Homebrewer Depth Charge top and a run of thermoplastic tubing into a container of sani as airlock due to clearance constraints. Set temperature to 50F (optimum for this strain is 50-55F). |
