Brewed 7/12/20
Directions:
1) Allow yeast to return to room temp/ smack
2) Fill sink with warm water and set honey jars in
3) Fill fermenter with 3 gallons of room temp water
4) add contents one sachet mead nutrient blend and stir
5) Boil .75 gallons of water
6) Add honey into fermenter
7) pour boiled water into empty honey containers/ cover, shake and disolve honey
8) pour hot water honey into fermenter
9) top with water as needed to reach 5 gallons
MUST created -
10) stir must until honey is disolved and well mixed up to 15 minutes - CHECK OG
11) Add Yeast
12) seal fermenter with airlock- ferment below 75F- should start in 24 hrs
Maintenance
1) 24 hours after yeast pitch briefly stir - Add yeast nutrients (FOAMED OVER)
2) 36 hours degas by stirring
3) 48 hrs after yeast pitch briefly stir - Add yeast nutrients (Clockwise for 2 minutes FOAMED OVER)
4) 72 hours after yeast pitch briefly stir - Add yeast nutrients
Secondary
Once fermentation has stopped and FG is stable..
1) siphon into fermenter let mead clarify for 3 months
Conditioning
1) Rack into sanitized co2 keg
2) force carb at 35 psi
2) leave conditioning for another month or two
Racked to sanitized pressurized keg 9/20. Temp 45 co2 volume 25 PSI
