Notes
  1. Heat 10L to 74 degrees C, cut the heat and add grain bill to strike water. Stirring through and ensuring no dough balls.
  2. Insulate kettle and mash for 60 min @ 68-66 degrees C
  3. Lift grains and batch sparge with 5L at 75 degrees C.
  4. Bring the kettle to boil and start 60 min timer.
  5. Add 60 min bittering addition hops. (In my case coopers pale ale LME adds 20 IBU so no bittering hops at 60 min - if using unhopped LME add 20g Cascade at 60 min).
  6. Add 10g Galaxy at 20 min.
  7. Cut heat after 60 min, let cool to approx 80 degrees C and add 20g Cascade hops and stir in for 10-15 min.
  8. Add Dextrose, LME and Maltodextrine to kettle and stir in.
  9. Add 2-3L cold water to the bottom of fermentor and add contents of the boil kettle.
  10. Fill the fermenter with cold water to 22L.
  11. Add lid and place in ice bath to cool to 24 degrees C.
  12. Once cooled to pitching temp, shake to aerate for approx 2 min then pitch US-05.
  13. Add airlock and place in temp controlled area to ferment for 7 days.
  14. At 7 days add 40g Cascade dry-hop.
    15 Fermentation should be complete in 10-14 days. Once completed transfer to keg and carbonate/keg condition.
