Sprinkled all yeast on top and placed back into fridge. Used 2nd half of Nottingham that had been vacuum sealed for ~1 week plus half of Windsor (weighed before and while pitching until it reached 5.5 g added). Resealed Windsor in same bag. |

Mmmmmmmmmmm. Oooooo weeeeeee. Smelled very British with toffee and almost baking spice. Tasted great with a British funk and dark fruit marmalade goodness. I can see why British people like cask ales. Hoping this character will carry over and still be present after it's cold and carbonated. I think a little carbonation should even help liven and lighten it up. |

Sample was delicious again. Very cloudy though. Hopefully the cold and Nottingham will help floc the yeast. Still had a very strong baking spice character that was working well with the British funk. Just hoping it won't be overwhelming, but I think I'm going to enjoy it. Should mellow out a little with age, cold, and carbonation. |

Into keg 1. Previously held Nelson Kviek which I dumped. Cleaned keg and lines quickly with PBW followed by StarSan. Didn't remove posts. Purged x5 at 40 psi and left at 40 psi for ~24 hours. |

Added gelatin to the keg. A little more than 1/2 tsp in 1/4 cup water. Purged once at serving pressure. |

Beer is pretty good now. But it took at least gelatin and about a month of lagering for it to started clearing. Now that it's cleared(ish) its lost some of the yeast sweetness and I'm not as in love with the English character of Windsor. Similar to S-33 in it's funk with a green apple slant, but without the tartness. Overall it's a good beer though. Maybe went a little heavy on the crystal malt though. |
