1 oz Yakima Chief Hops - Citra LupuLN2 (Cryo) (25 AA) (Lupulin Pellet) added at or possibly just after high krausen. Krausen was pretty high in the morning, and it looked about the same maybe slightly less after work. Very cloudy and churning fermentation. Gravity was around 1.022. Dumped the whole pack into one spot and they sank below the krausen. |

/ 3 Ounces (Pellet) for 3 days
1 oz Galaxy (15.1 AA)
/ 2 Ounces (Pellet) for 3 days
Dumped in straight and removed tilt for N/W ESB. Took fermentor out of fridge and put in box on basement floor. |

1.0135. Gravity sample was very hazy and opaque. Had a great smell of nice fruity hops, the taste is masked by hop astringency though (same as every highly hopped beer I've made). Hopefully the Nottingham will floc out and pull that out quicker than has been happening. I think it should be good once the hop bite fades. |

Filled keg 3 (previously Ye Olde Ale which I dumped) purged x 5 @ 40 psi and left at 40 psi. Had extra so tried to use carbonator cap on plastic bottle but it didn't seal so filled two 12 oz bottles. Just left them flat and capped them, put them in the fridge. Might try adding 2 mL maple syrup to each for bottle carbonation. |

Added gelatin to the keg. A little less than 1/2 tsp in 1/4 cup water. Purged once at serving pressure. |

Maybe a week after adding the gelatin this beer became very clear. Since then it has gotten better and better with the hop astringency fading, but still not quite gone. The hop character is still a bit herbal and tea like, I believe from over hopping. Also I don't think I'm a big fan of Mosaic. Has a real dank quality that might be good in small doses but is easily overpowering. This beer is a bit thin and the hops are not fruity enough. |
